This month's Team Spotlight highlights Molly Montaño, who brings a wealth of experience to our team as a new Account Manager. Let's get to know Molly a little better!
Tell us a bit about yourself. How did you wind up at Elevation?
I am passionate about the restaurant industry. Having gone through culinary school, cooking, and working front & back of the house positions led to working in food distribution. I married a chef, opened a food truck, created a food/event program for a winery, and ended up in restaurant equipment sales.
Where do you see the future of this industry going? Is there anything that we might see more or less of?
I think the hangover of the pandemic, which has created a labor shortage and huge increases in the bottom line, has set off a chain of major changes in the industry. I think we will see a lot more fast casual concepts and more computer-operated options.
Why do you feel the foodservice industry is so important?
I think the foodservice industry is where so many of us had our first work experiences. Foodservice is a quick insight into a culture. In Europe, you see a lot less to-go because people take the time to sit down and have a meal. I think foodservice establishments that can pivot and change with the world will have the most success.
What is your favorite restaurant and why?
State Bird Provisions in San Francisco. The first time I ate there 13 years ago after they had just opened, it felt like they had invented a new style of cuisine. The flavors were familiar but so different. I ate there recently, and it is a well-choreographed dance of service, cooking, and dining. Exquisite all the way around.
What is at the top of your bucket list?
Top of my bucket list is going to Vietnam. I dream of the flavors of their food and exploring the waters.
Are you a fan of any sports team?
The San Francisco Giants. I love going to games at the park. The buzz is infectious, even in mediocre seasons.
Where did you grow up? Any interesting places you’ve lived throughout your life?
I am from San Francisco and lived there most of my life, aside from 5 years in my childhood when we lived in Paris and the last seven years in Albuquerque, New Mexico. I think living in a foreign country as a child really made me open-minded about people, food, and culture.
What is your go-to meal?
Sushi
